How do you even pick up a rooster that is posturing and in an aggressive stance?

When I pick up any of my roosters, I make sure that I don't have their
faces close to mine, and I have a gentle hand on their neck, while I am
holding them. I had one rooster, Bo-Bo, that would bite and flog me, no
matter how many times I'd hold him. I think he was a Leghorn.
