If that was true then chickens wouldn't eat doughnuts, left over cake, and other goodies with total and complete relish.

You know, I've read that too. But I grow head lettuce in my garden, it's just a regular lettuce that the leaves clump together in the middle to form a head, sort of like cabbage does. I don't see how it can be that much different. And the animals eat it just as fast as any other lettuce. It seems like they wouldn't touch it if it had no food value at all.
