The best way to discourage dogs is to make an enclosure they cant see in Like with a short wall about three feet tall.  then put hot wire along the top of it.  When they hop up to see the chickens they get zapped right on the nose.    Unfortunately free range days are over for chickens in areas where neighbor dogs can get to them.

but the Zap from the electric will make the dog associate the smell of chickens with excruciating pain.  It only takes once.... maybe twice.

this is how I kept an escape artist dog IN the yard once.  Hot wire along the base of the fence nose height.  then another strand around the top incase she jumped up.  I only had to power the charger about three times.    But I kept it on the fence a year.    She only hit the wire twice.  I felt so bad because she literally screamed..... but the lesson kept her safe and living with us for another ten years.

It's possible, however there are several things to be aware of. 
 
First the mass of the salt pellet is likely to be too small to have much range or impact value.
 
Depending on the type of pellet gun the salt may not have enough coherence to withstand the impact of the air bolus, &/or if you can control the air pressure (such as in a pump type gun) the pressure that allows the pellet to stay together may not get it very far past the muzzle.
 
If the salt pellets do make it out of the gun be sure to clean the bore & mechanism after each use or the hygroscopic nature of the salt will quickly rust the barrel.
