Welcome to the group! The RIRs will bite your hand if you try to collect eggs while the hen is still on the nest. They can sometimes draw blood. But mine lay more than any other duel purpose breed I've owned in my 30 years of keeping chickens. I just let them get off the nest before I take their eggs and I never get bitten. I can't say about the Wyandottes. I also really really like White Rocks! They lay almost as well and grow into a fryer more quickly than a RIR. And they will sometimes set.
