I have noticed a couple posts on the subject. There are some common
sense rules and some old timers tales plus scientific stuff.
First, if you can't collect eggs every day it depends on temperature and
if a hen is sitting on them. Below 45deg F Eggs last forever. I
personally, while in the military (Roman Legion), unpacked, cooked and
served eggs that had been in cold storage 10 years. If a hen has been
brooding them I would say 3 days or you can tell the kids they don't
have to eat the feet. I think eggs have to reach a critical temperature
before they start to develop. I believe it's up around 100deg F.
In Europe fresh eggs are kept at room temperature for up to a week or
more. I think their rooms are cooler than ours and they wear woolies.
Frozen eggs: the cracked ones go to the dog. Put suspected frozen eggs
in the refrigerator immediately. If you put them on the counter in a
warm kitchen you can watch them crack. In the frig they thaw gradually
without cracking. Use them just as you would if they weren't frozen.
Freezing Eggs: Any way except in the shells. Separated or not.
Dirty eggs: If you plan to use them within a couple days wash them in
luke warm water, no detergent. The real cruddy ones go in the compost.
The best cure for dirty eggs is a clean nest. The best nests have a
slanted top so the birds can't roost on top of them. Most chickens will
not sleep in the nests. This don't apply to Silkies. You have to change
their bedding every other day.
