You will not know exactly what color they will lay until the start laying. The entire spread of pastel blue to green is an option along with the occasional pink or taupe.
We have one and she is a pretty golden color and looks strikingly like a bird of prey. As befitting that look she is kind of aloof. Not mean or anything but not interested in people either. Our eggs are a mostly green shade of blue/green pastel.
If keeping chickens is at all common near you then you should be able to find an Ameraucana locally. Sometimes you will see "Easter Egg" chickens being sold. These are mixed breed chickens which lay the same blue -> green with the occasional pink eggs. The colored egg gene transfers easily.
