Age of the hay shouldn't make any difference as to whether it would get moldy-when the hay gets damp, or was baled damp.

The only problem I'd have with hay as (floor) bedding for chickens would be that they can't scratch it around as easily as finer bedding like shavings or sawdust. If you have access to a chipper/shredder, you might try chopping it up--then it would be excellent. As is, it should be great for nest boxes--and you could still use it on the floor, you'd just have to fork it around more to keep it from packing down, and would probably find it harder to clean out eventually.
