* Tea eggs
Eggs boiled in tea. The shells are cracked but left largely intact which dyes the egg white with a spider web or lace kind of effect. I make this with Quail eggs too; they make great snacks.

* quick morning egg sandwich
Take a microwave safe container about the size of your palm. Make sure you have something to cover it, sometimes I use a plate. Crack an egg or two in. Scramble it and add in seasoning -- salt, herbs (we like Taragon), etc. I also splash in a little milk or water. Set it in the microwave with the cover/lid and cook for around 1 minute 20 to 1 minute 45. TIme depends on your microwave. Toast a muffin or bagel or something and when the egg is ready drop it on the bread. Add some cheese if you like. You can cook more than one container of egg at a time all you have to do is experiment with the time needed. Adding two more containers add about 30 seconds in my microwave.

* Frittata (Italian) / Tortilla (Spain) / Omlet (France)
I prefer the taste of the egg being slightly browned like in Italy or Spain versus the more steamed yellow look of the French version. These are like skillet egg pie. Toss in what you have and go for it. Pasta, potatoes, greens, whatever. Cooks quickly and makes a great week night dinner. Kids treat it like egg pizza :-) Sometimes I flip it with a plate for help and others I use the oven. Just depends on whether we have a warm oven already.
