Just finished making this--individual breakfast quiches. I make 2 dozen at a tiime (might as well do a large batch!) but they freeze well if need be. Or, you can halve the recipe.
2 pkg. frozen chopped spinach, thawed and squeezed "dry"
about 8 large eggs
large onion, chopped
About 4 cups shredded cheese (I like 3/4 cheddar, 1/4 Parmesan)
1/2-1 cup chopped Kielbasa, ham, or sausage (optional)
salt & pepper to taste
maybe a dash of chili sauce or Worcestershire
maybe some chopped red/green peppers
Oven at 350F.
Line cupcake/muffin tins with foil or paper liners (foil is easier to remove if you freeze them, but paper is cheaper and will compost!) Spray liners lightly with cooking spray (you'll regret it if you don't).
Mix ingredients well, and spoon into muffin tins.
Bake for about 20 minutes, or until knife in center comes out clean. (I like them just a bit crisp at the edges, so at 20 minutes I just turn off the oven and let the tins stay in there until the oven is nearly cooled).
For breakfast, we microwave two apiece (after removing the liners)--sticks to your ribs well into the morning!
