I love that one too! But we call it bird's eye or bird's nest, depending on who's coming to eat. My fav's include carbonara, so easy and uses up any left overs. My favorite version is a popeye, spinach and swiss cheese. I sprinkle crushed bacon over the top. Another one I really like I call Dr. Suess. I take thin slices of ham and put in a cupcake tin, crack an egg into each one, bake till almost done and sprinkle with grated cheese, pop back in the oven till melted.

I also love tarts. Easy, uses lots of eggs and gets me to eat a vegetable.

I hope lots of people write in, I need more ideas for Sunday morning. I love eggs benedict, but it's getting overdone.
