Hi Scott, After many years of working with a lot of different breeds I would have to say that Wyandottes have to be the best breed for laying in the cold north country. They were developed in your area by people wanting the same kind of chicken you are looking for. I am very familair with the Wyandottes because I have raised them in just about every color and in both large fowl and bantam sizes. McMurray used to have some decent Whites that laid well and made excellent baking hens. The whole breed for the most part is docile with very few mean birds ever encountered.
Duane Urch has them and his are mostly the extremely rare varieties such as Buff, Black, Partridge, and Silver Penciled. He lives in the cold state of Minnesota so I would say his are proven cold hardy.
Another breed that would fit the bill is the Chantecler and I am sure there are a few breeders near you who have them. Dean
