Being in the UK I felt I should chip in... My mum always taps around the top in a little circle with the edge of the spoon and then lifts the top off the boiled egg and can scoop it out. My uncle smashes all the top with the back of the spoon but we think that makes too many pieces of shell to deal with in our arm of the family! Is it a bit like the scone dilemma - do you put the cream or the jam first? LOL!
