Hi Bonnie:
Yes, it is possible for a bird to pass albumin w/o yolk or shell.  Also possible for a shell to have only albumin in it - no yolk.  Neither is common but can happen.
 
You also asked: "I grind up their own egg shells and give that to them instead of oyster shells. Is this OK?"
 
It is OK to give them eggshells, however it is not a good practice to rely only on eggshells to supply the calcium and other minerals necessary. 
 
If you are not feeding a good commercial layer ration with sufficient calcium, magnesium, manganese and phosphorus you definitely need to be feeding oyster shell.
