I have collected eggs up to 3-4 days old…..not intentionally, but small coops were overlooked for egg collection. I consider the temperature and if it isn’t over 75 degrees AND it was cold in the evening, I use them. No issues and have been doing this for a couple of years. NOW, if they have been under a hen, I do not keep them because I don’t want to come across a tiny little chick embryo, no matter how small.
Bantam eggs make wonderful devilled eggs. We call them “one biters” and they are usually the hit of the party. We have had fun with our multi-sized eggs at family gatherings. We love to see the looks on family member’s faces when they see devilled eggs in bantam, standard AND TURKEY. It is really funny.
We are running very low on eggs, between heavy molting and the loss of daylight. I am reluctant to put a light in the coop and will hold off as long as I can. My girls are half naked and the cold evenings are worrisome, but they seem to be doing fine. My barnyard looks as if great carnage has taken place…….so many feathers!
One problem we have had already this season is freezing temps at night and cracked eggs in the morning. Unlike most chickens, some of mine are late afternoon layers and their eggs don’t get collected until the next day. They freeze and then there is a hairline crack. I don’t sell these eggs, but if the membrane is still intact, I use them for our family or the dogs.
Very dirty eggs that are cracked are pitched into the compost bin. Uncracked dirty eggs are cleaned and kept for us if they are stained. When I have an abundance of eggs, I scramble lots and feed them to the chickens and the dogs.
Next Spring, when I have more than I can handle, I plan to freeze in freezer bags. There have been so many times this year I could have used those frozen eggs for baking, cooking, etc. When freezing them, I scramble them and add a pinch of salt if they are for cooking and a pinch of sugar for baking. I don’t know why. Read it somewhere and it stuck in my brain.

I would like to know this, too, and also if stained eggs are good to
keep or not. If they are too dirty, I pitch them. I also float them and
candle them, too. I collect both standard and bantam eggs, and I would
LOVE to serve some Deviled Banty eggs, just for kicks. I am sure they
would be as good as regular Deviled Eggs.
