once ou boil the eggs for 15 min add a spoonful of baking soda. most of the eggs will peel perfectly.

I haven't tried it with really fresh eggs--but I think it was someone on here who suggested this. As soon as you are done boiling (and cooling) the eggs, roll and crack the shells while they are still underwater. The water that seeps inside the shells seems to work beautifully with slipping the shells off once you do peel them.
