I spread then till in fresh chicken manure directly on the garden in the fall after everything is out where it stews till spring. During the other months I dump it in the compost heap.
Be firm and consistent training your dog with "leave it". I don't trust our new 8 yr old dog when we're not home even though she knows the "leave it" command when she's with me. She goes in the kennel during the hours I'm not home because chickens are just too much of a temptation. If she can't learn the "leave it" command, you might have to get a shock collar to get her attention. Some people do not like shock collars because of the pain they inflict, but imho when it's a matter of life or death, a good collar is a good investment that will save both your chickens and your dog.
