What I've seen in the Philippines is a bit different from what I've read here. There they just hold the chicken and cut the throat and let the blood flow. They eat heads barbecued. They also barbecue the feet and the intestines.
When I was in Laos I stayed for a short while at a specialty restaurant where they caught the blood and ate it with chopped peanuts. Not sure how safe that was, but I admit trying it and not being so keen on it.
I would assume the most humane thing is to lop off the head, but don't any of you use the blood for anything?
