Using the egg shell method and moving the egg yolk into one shell was how my Mom taught me, but I started using the toast method when I got particular about not getting a bit of white into the mix. I'm going to try the bottle method. It looks easy and fast.

I'm a relative novice to needing to separate eggs (my dear mum definitely didn't like anyone else messing around in her kitchen, so it was only when she had to move to the nursing home with Dad that I began cooking!) But so far I've made out well with the method of cracking the egg, then gently pouring the contents back and forth between the two halves, letting the white slide out into the bowl. Actually not unlike Cassandra using her fingers! And yes, always do each egg separately into a little bowl, then (if all goes well) add each white to the bigger bowl.
