As a child the way I was taught to separate the yoke and white is this: crack the egg. Hold the egg over the bowl. Tip the yoke into one side of your shell, letting the white slide into the bowl. You might tip the yoke over to the other shell to get any remaining white to slide into the bowl. Then drop the yoke from the half shell to the yoke bowl.

I was able to get the yolk without a single bit of white. I'll try this method next time. Currently, I just pour the egg into my hand and hold the white as the yolk runs into the bowl. That works, but its messy and not something I want to do in front of company, even with the cleanest of hands!
