Here is my grand mothers tried and true suggestion. She had many chickens.
Start the eggs in cold water, once the water begins to boil, 2 minutes, then pour cold water in the pan until the pan and eggs are cold, let stand in the cold water for 5 minutes to 15 minutes. Remove from water, let them reach room temp, she says the shells will practically fall off.

No help on the white yolk but does any one have tried and true suggestions on hard boiling fresh eggs. Never was a prob pealing store bought but eggs only a day or two old or less do not peal the best.
