I think what you are getting at Deb is anthropomorphism or the attribution of human motivation, characteristics, and/or behavior to animals.  There isn't anything wrong with it but at some point, you have to realize that humans and animals are very different and have different characteristics and behaviors.
 
Our little three month old Serama roo is coming into adolescence and learning to be exactly what he is.  We have parrots in the house too and they tend to roam on the floor on occasion.  We've had a few problems with Dagbert the roo going after the parrots when they get on the floor.  I'm assuming this behavior is similar to what you describe with your hens and some of your roos.  Well, one of the parrots bit him last weekend on the comb and he's learned his lesson and now respects the parrots.  It's amazing what a little negative reinforcement can do.  Daggy is a member of our household and lives with us.  We would never think of getting rid of him but we certainly didn't like him stalking our parrots either.  The parrots took care of the problem themselves and everything is right in the world again!:)

It's funny when we see a similar animal trait show up in people. If they can't be nice...they can't stay.  Alex, the house rooster, roams freely through the house with no fear of being attacked by the 8 house cats who share his space. The cats had to learn that Alex is a member of the family, just like they are, and
they had to learn to over ride their natural preditor instincts.  And so it is with our outdoor chicken villiages.  We spend alot of time just sitting on a bench with the chickens, watching them, holding them, talking to them, but watching the rooster, so charming and debonair, clucking to them and doing his wing dance.....no violence or upset. It's a wonderful and peaceful time, but it WOULDN'T be if we did not have the awareness or desire to make it that way.  Of COURSE this isn't everyones cup of tea! I respect that. I'm just saying, that when folks come to visit and they see this tranquility, they want to know about it.
