It's possible, however there are several things to be aware of. 

 

First the mass of the salt pellet is likely to be too small to have much range or impact value.

 

Depending on the type of pellet gun the salt may not have enough coherence to withstand the impact of the air bolus, &/or if you can control the air pressure (such as in a pump type gun) the pressure that allows the pellet to stay together may not get it very far past the muzzle.

 

If the salt pellets do make it out of the gun be sure to clean the bore & mechanism after each use or the hygroscopic nature of the salt will quickly rust the barrel.
