A bin is better for controlling moisture levels.  Where I live it's very dry, and the chicken poop frequently dries out if left in an exposed pile, and takes a very long time to compost.  In places where it's very wet, you could have the opposite problem: a soggy, smelly pile that doesn't get enough oxygen.
 
I have a big "Earth Machine" compost bin.  I compost my chicken manure and bedding (pine shavings), kitchen waste, used coffee grounds and filters from the local convenience store, shredded paper, and yard waste like spent annuals and shrub trimmings.  I put the yard waste and the used coffee filters through a small chipper/shredder, since they compost much faster if chopped into smaller pieces.  I water the compost when needed to keep it as moist as a wrung-out sponge, and turn about every 3 days using a "Compost Crank".  It heats up beautifully and composts fast!  When the bin fills up, I transfer the partially finished compost into a tumbler, a plastic barrel mounted on a spindle so you can turn it by rotating it.  This is where it can finish, without having any new materials added to it.
