I teach all my hens to let me pet them while nesting. Then they are not so defensive when eggs are pulled out.

You can also take a pencil and write the date (either current date or expected hatch date) on new eggs that you plan to hatch. Then you can check for new ones your girl has laid while brooding and know when to pull others out to discard.
