Did it!
I had help from a guy I know who does dog grooming. I read to him how to cut the spurs -- that was a big clue that I know nothing.
When you trim the spurs, it is easy if you know what you are doing. In my case I didn't.
Clay told me to Google and I did. Turns out you measure the spur and trim at 5/8". If you trim to the leg like I wanted to, there is a chance that the rooster will pick at it and bleed to death.
That's what Google said.
Anyway both roosters are done. Whew! What a relief!
At least the hens will not be shredded anymore.
