Kristen,
I know how you feel. It is not an easy thing to do. Especially the first time. I won't say it gets easier, but you do get the hang of it better and it becomes more tolerable. It should never be easy. I did two turkeys this year. The one at Thanksgiving went without a hitch. I had decided to do the slit the throat and bleed out. I know this is not popular with everyone, but it was my choice. Then at Christmas, I did the second one, the same way. Unfortunately this one did not go as well. It was long drawn out and I got so upset it took me all the next day to recover. I was almost in tears. It happens. Just like in any other thing you do in life, things happen. And not always the way you intended. What you need to remember is that you went into this trying to do what you thought was going to be the best way for you and your birds. You did not intend for it to go the way it did.
