The average age is twenty weeks, but there are many variables. Breed, health, how well fed, weather/temperature, etc. Some breeds will start earlier and some later.
As far as what to feed, I just read this at the feed store. Starter crumble the first six weeks or so, then a grower feed until egg laying age and then switch to a layer feed. (I prefer pellets because there is less waste) You don’t want to switch to layer feed until they actually need the extra calcium and other minerals that are depleted during their laying life.
I choose NOT to feed medicated feed. I treat illness if it appears, but don’t like to give meds unless absolutely necessary.
Scraps in moderation are good for the chickens, but I am careful about “extras” for the chicks………their crumble has a balance of needed nutrients. Greens are good for them ……..but pasta for chicks can fill them up and then they don’t eat their dinner………like kids.
