[CHICKENS-101] Leghorn roosters

Ok technically they are young cockeral chicks right now they are 6weeks old today. They are nuts no amount of handling seems to be taming these suckers down. I'm going to have to change to a regular waterer soon because they freak out over everything and knock the chick waterers over.
Now you ask why then do I have them. Well they were free "packing peanuts"(Georgia's term) from Ideal.
Ok my question's are 1) How do you leghorn people deal with these things? Mind you I have orpingtons for the most part although I did have RIR's at one point and I have Sumatra's (mine are quite calm though).
2)At what age should one dispatch said cockerals to freezer camp before they get downright mean? Curious there because I know they aren't a particularly meaty bird.
Thank you for your help!
