What my MIL told me to do, is to use eggs that have been in the fridge at least 2 weeks. Then boil and immediately, transfer from boiling water to ice cold water complete with ice in it. Let set a bit then peel. So far so good here. Although I will say that I've taken some of my EE eggs that were less than a week old and they've peeled wonderfully, being hot.

You might try starting from the larger end, and peeling them under a stream of water from the faucet--that seems to help. Of course it's miserable trying to keep the shells from going down the drain!
