Use your oldest eggs.  If you don’t have any old eggs let them set on the counter overnight before boiling. 

 

When I boil eggs I start w/ room temp eggs, bring them just to the boil, turn the pot off, cover, and let cool. 

 

To peel, use a wet spoon, put it between the shell and egg, slide it around, loosening the shell and peeling it away.

Ok, have a question.  There are several of us that are wondering....

What do you do to ensure that you can easily get the shells of the eggs after hard boiling them?  I don't care what we do, but for some reason with our "home" chickens, the shells are very hard to peel appropriately.

Any suggestions are welcomed.
