I live in Northern Ca as well and have not had an issue with mold. If ventilation is an issue, you could drill some small holes near the top of the can maybe. I just know that having the feed in the garage was the kiss of death for me. I lost almost everything in that garage because of the mice.

On the negative side, I do not deal with mice, all cute and fuzzy, we have rats, and not your basic roof rat, we have river rats.
I have trapped some that were over 8" long, not counting the tail.
My weirdo neighbor thought they were cool, so she fed them, now I feed them, to the buzzards J
