Ussery's "The Small-Scale Poultry Flock" very well describes the method of snapping the chicken's neck. I haven't tried it, but looks like it's quick and fairly easy. Also shows the chopping block and killing cone.

A few years ago there was a bit of uproar when Queen Elizabeth, present at a shoot, picked up a wounded pheasant and efficiently wrung its neck. Good country woman, I say! (She was noted to have a pheasant feather in her hat the next day as she left church...)
