Your chicken was playing. If she had been in her nest box engaging in this behavior it'd be broody behavior but because she was outside running around, she was having fun.

So I was sitting outside watching my hens. My white leghorn cross runs over and starts throwing dead leaves on herself. The wind kept blowing them right off and she kept getting another one and trying to put it on her back and make it stay. This went on for a few minutes... what in the world was she trying to do?
