Never had quail, so I can only talk about chickens from experience.
Just keep it cool and it will not develop.
They don't really start right away, they are adapted to just sit in the nest
until the hen decides she has enough and sits on them and keeps them warm
for at least 2 days. So it might total a week or more before anything
starts to grow.
If you are wondering about it, break it in a cup first to see what you have.
Just don't keep them warm too long, and over maybe 80 is probably too warm.
At least it's over 80 today, and humid, and I'm too hot.
I ate some last week that I had not collected in 2 or 3 days, from a stupid
hen who thinks she wants to set this time of year, and they were fine.
I also had the rather unpleasant experience one time of breaking an egg into
a hot frying pan and seeing an eye and a beating heart, which kept on
beating for quite a few minutes while it cooked. Since then, I always break
them in a cup first if I have any suspicions. Yes, it was bad! For me
anyway.
Actually-----Sept. 20 is the autumn equinox, isn't it? more or less? And
day length is about the same as the spring equinox. I've seen hens want to
set in the fall before. Doesn't work in this climate, NYS, unless they're
indoors and heated.
(Sigh) Except for Silkies. I've had Silky hens hatch and raise a few chicks
successfully in the late fall, outdoors, no heat. Somehow.
