Lori, I use a syringe with a needle to remove the contents and save them to decorate. Tap a little hole, push air into the egg slowly to force the contents out thru the one hole, when done I put it hole down to dry out.  Serama's have wind eggs the size of a large pea.  I am surprised by how many actually do have a yolk in them.

I have seen a couple of these eggs.  I was puzzled by them, too.  I haven't seen any in many months now.
