Well in my opinion there are some variables. Feed, breed and so on. We butchered some rooster a few months ago. One rooster I know was about a year old. He was given to us because he was mean. We called him the rooster from hell! I couldn't even go in the coop after he got here. He was so mean. He was tough and stringy. We butchered off 23 roosters varied ages 6-12months. Much of the meat was tough and brownish in color.
So my advice would be to keep an eye on their size and butch somewhat young. Unless you want a lot of soup or chicken and dumplings lol.

Okay, my oldest chicks are only about 6 weeks old, but I have one Buff Orpington roo who seems to be a bit early about learning to crow. He woke me up this morning with his first sick sounding attempts at crowing.
He's not big enough to butcher yet, so I'll have to wait a bit. At what age should meat chickens be butchered?
