Duck skin! Well, I don't eat chicken skin anyway so, no loss. On the few
occasions when a rooster crossed me (went after the kids when they were
growing up) I just skinned him and put him in the soup pot. But duck skin!
Isn't that the reason for eating a duck?!!

I've never raised a goose or duck. In fact, my only experience w/ birds is
laying chickens and a couple turkeys a bejillion years ago.

Gosh, I haven't eaten duck or goose in a loooong time - and I grew up w/
them being our holiday birds (didn't eat turkey until I married!).

I hate having to process large numbers of birds at a time. The feathers are
a pain I agree. I swore if I ever process another duck it will be skinned.
Their feathers are never ending it's crazy.
