When I have deer that I have to euthanize (by firearm only, animals that are euthanized with medication have to be properly disposed of) I call the DNR and they allow the carcass to be picked up by processors for use in local soup kitchens.
The DNR officers in my area are always available to me; they respect what I do and have been extremely helpful and I can't thank them enough for all the help that they have, and continue to, provide.
From some of the things I've heard from others, I believe that I have a very fortunate situation here ;)
